This pork makes great roll sandwiches. So at Jen's request here you go.
Powder: 1 Tb. salt
1 Tb. brown sugar
1 Tb. chipotle chile pepper
1 Tb. sage
Rub all but 1 Tb. of powder on 6lbs. boneless pork roast
refrigerate over night.
Cook at 300 until shreds easy 3-5 hours
Discard all the juice from pan and shred
pour sauce over top and keep warm till you serve
Sauce: 1 cup cider vinegar
3Tb. Brown sugar
1/3 cup ketchup
1 Tb. reserved powder
Boil all ingredients and then simmer 10 min.
I have only found chipotle chile pepper by McCormick
Sorry it's such a large amount but it freezes well or just half it.
