Cornbread Muffins & Honey Butter

I've been looking for a better cornbread recipe.  I think this is it.  I really loved these muffins and they are irresistible with the honey butter smothered on top.  

Cornbread Muffins

1/2 cup butter, softened
1/2 cup white sugar
1/4 cup honey
2 eggs
1/2 t. salt
1 1/2 cups flour
3/4 cup cornmeal
1/2 t. baking powder
1/2 cup half and half
3/4 cup frozen corn kernels, thawed and pounded

 Preheat oven to 400 degrees.  Grease your muffin tins.
Cream the butter, sugar, honey, eggs, and salt.  Mix in flour, cornmeal, & baking powder.  Blend thoroughly.  Stir in 1/2 and 1/2 and corn.  Spoon batter into muffin cups.  Bake 20-25 mins.

Honey Butter

1 pound butter
1/4 cups honey
1/2 t. ground cinnamon
1/2 t. vanilla extract

Place butter in mixer and beat at low speed for one minute.  Add honey , cinnamon, and vanilla and combine well.  You may chill it if you desire.  I like it less stiff, easier to smother your muffin top with.  HA! Muffin Top! That's funny.  I don't care who you are.

These are very tasty and moist. Ive made them 2 sundays in a row. I felt like their needed to be more honey in the butter.
