Vanilla Apple Crisp with Caramel Sauce

I admit, I neither MADE nor wrote this recipe (but intend to, its apple season!) but I just had to share it here. It looks so dang easy and sounds reallly good to me. Plus, this place is draaggiinn..

I used some granny smith and some honey crisp apples because I had them on hand but you can use can use your favorite baking apples. I also had some caramel sauce and I thought that it would be really nice if I topped the apple crisp with vanilla ice cream off with some of it. The hot apple crisp with the melting vanilla ice cream all drenched in a warm caramel sauce was so amazing! What a great combination of flavors! I can't wait till tomorrow to have another piece.

Ingredients:
5 cups apples (peeled, cored and sliced)
1/3 cup sugar
1/2 vanilla bean (split lengthwise & scraped)
1 tablespoon lemon juice
1/4 teaspoon nutmeg
2/3 cup flour
2/3 cup rolled oats
2/3 cup brown sugar
1/4 teaspoon cinnamon
1/3 cup butter (melted)

Directions:
1. Toss the apples with the sugar, vanilla, lemon juice, and nutmeg.
2. Mix the flour, rolled oats, brown sugar, cinnamon and butter in a large bowl.
3. Place the apple mixture into an 8x8 inch baking dish and pour the topping on.
4. Bake in a preheated 350F oven until it is bubbling and the top is golden brown, about 35-45 minutes.

Tada, I made it last night!
I think its pretty darn good with a scoop of ice cream & caramel when its still nice and hot! yum.
p.s. I didn't really get it when it said "toss" the apples with the nutmeg, lemon juice, etc." Best way to do that I found out was to put it all in a gallon bag and then sprinkle in the ingredients and then shake it.

I have this recipe and it IS good. Thanks for sharing it here Em I am inspired to make it again since it has been so long.
