Rootbeer Cupcakes


I've been on a cupcake kick lately - much like alot of my sisters. Thought this one was super fun. I say let's open our own Sweet Tooth Fairy! EEEH!!

Rootbeer Caramel Filling
1/4 cup butter
1 cup sugar
1 can sweetened condensed milk
3/4 cup Karo syrup (corn syrup)
3/8 tsp rootbeer concentrate
1 tsp vanilla


Add everything except the rootbeer flavoring in
a heavy bottom sauce pan. Stir constantly until
it starts to get a little darker (about 5 minutes).
To test the thickness, spoon a small amount into some cold water so it will cool quickly. You
want it to be thick enough so that it won't ooze
out when you take a bite and soft enough that it
doesn't get stuck in your teeth. When it is the
thickness, take it off of the heat, wait 30 seconds
and then add the rootbeer concentrate.

Rootbeer Cupcake
2 cups flour
1 1/3 cups sugar
3 tsp baking powder
1/2 tsp salt
1 cup evaporated milk
1 tsp vanilla
2 tsp rootbeer concentrate
2 eggs


For the frosting, I made a basic butter cream and then added a tiny drop of rootbeer flavoring.
