Coconut Peach Dessert


This is the dessert I brought to Dawsons baptism.


1 1/3 c flaked coconut

1/2 c chopped almonds

1/3 c sugar

2 T all purpose flour

1/8 t salt

2 egg whites lightly beaten

1/2 t almond extract


mix first five ingredients then add egg whites and almond extract. Line a baking sheet with tinfoil; grease the foil well. Spread cocnut mixture in a 9 inch circle. Bake at 325 degrees 20-25 min or until browned. Let it cool completely before topping with cream then peaches.


Topping:

2c heavy whipping cream whipped with 1/4 c sugar

4 c sliced peaches mixed with 1/2 c sugar
