For me this is a perfect summer lunch.
Quick to assemble, healthy, light, uses your garden produce.
Take one piece of Greek Pita flatbread and sprinkle with cheese of your choice.
(I used a Mexican mix because that's what I had.)
Broil until cheese is melted.
Top with baby spinach
Chopped garden tomatoes
Chopped garden cucumbers
Dress with your favorite dressing.
(I used Costco's Organic lemon ginger dressing)
Delicious and filling.
Perfect.
