Cook book mistake! and Zucchini Cake

I made the mile high biscuits recipe last night and realized that the cookbook says 1/2 t of baking powder . It should have said 4 1/2 t baking powder make that correction unless you prefer hockey pucks to biscuits.

Zucchini Cake

Made this for granny who visited this weekend. It is very dense and moist.
3 c flour
3 c sugar
1 t salt
1 1/2 t soda
1 t baking powder
2 1/2 t cinnamon

combine all dry ingredients and stir.

Mix all wet together amd slowly add to dry while mixing

1 t vanilla
4 eggs
1 1/2 c vegetable oil
3 hefty cups grated zucchini. ( do not peel the zucchini and avoid the seeds)

can add pecans or walnuts to the mix if you like.

Grease 3 round cake pans or an 11 x 14 cake pan and bake at 325 degrees for 45 to 60 min for the big pan or 20 to 25 for the rounds. Test for doneness inserting a knife and seeing if it comes out clean.


Topping options:

2 c chocolate chips mixed with 1 c brown sugar and nuts sprinkled on top prior to baking

or 1 1/2 sticks cream cheese (12 ounces) and 1/2 c butter softened. Blend cream cheese and butter together mix till fluffy and smooth. Slowly add 3 c powdered sugar or enought to get a good consistency of frosting.
