1 c. sugar
1 tsp. vanilla
1c. butter flavored shortening
1/4 tsp. salt
2 eggs
2 c. grated fine carrots
2 cups flour
1 T. water
2 tsp. baking powder
Cream together sugar and shortening. Add eggs and beat, add all dry ingredients, add carrots, vanilla and water. Spoon onto greased cookie sheet and bake at 375 for 8-10 min.
Icing
Juice of 1 orange, 1 T. melted butter, and powdered sugar to spread. The icing should be thin. Spread on while cookies are warm
