I haven't made these, but they sounded delicious.
2 C. raw walnuts (large pieces or halves)
cooking oil spray
1 T. plus 1 t. sugar, divided
1/2 t. kosher salt
1/2 t. pumpkin-pie spice (cinnamon, ginger, nutmeg, allspice or ground cloves)
2 T. vanilla extract
2 T. butter
Preheat oven to 350. Spread walnuts in a singl elayer on a shallow baking pan covered with cooking-oil spray. Bake uncovered for 8 minutes. While the nuts are roasting stir together in a small bowl, 1 T. sugar, salt and pumpkin pie spice. Set aside. In a 2 C glass measure comine vanilla and the remaining 1 t. sugar and butter. Microwave for 30-45 secs. until butter melts and the mixture boils. Remove from microwave and stir well. Drizzle over roated nuts and toss to coat. Sprinkle the spice mixure over the walnuts and toss to coat. Return walnuts to the oven and bake for 2 more minutes. Remove from the oven and transfer to wax paper to cool for 10 mins.

You don't know me, but I follow your blog through Sherry Hancock (my sister-in-law). I tried this delicious nut recipe and it is fabulous! I sprinkled the nuts along with croutons into homemade butternut squash soup and found it to be heavenly! Thanks for the inspiration.
